Ingredients: 

2 cups young coconut meat, roughly chopped

2 cups cherry tomatos diced

3/4 cup red onion, chopped

1/2 cup loosely packed cilantro

1 Avocado

1 Lemon, juiced

1 Lime, juiced

1 Tablespoons of Tajin seasoning

1 Tablespoon of vinegar

1 Tablespoon olive oil

Salt and pepper to taste

 

Method:

1.  Combine coconut, tomatoes, onions, cilantro, tajin, vinegar, salt and pepper, and olive oil. 

2 Pop in fridge for at least half hour before eating.

3. Top with avocado and lime juice.

Enjoy with some tortilla chips
